Warm and sunny early morning, sipping earl grey tea and I’m having toast smothered with homemade ricotta, sweet like candy pineapple and sliced mango. The Barefoot Contessa, Ina Garten shares her quick recipe for ricotta on Goop‘s website that I now make weekly. 4 ingredients and it only takes 30 minutes. I especially love it on toasted bread and often make it with meyer lemon juice rather than white vinegar as our lemon tree just won’t stop producing lemons, I’m not complaining.
